Chicken Lettuce Wraps

I can’t remember how old I was when I first tried lettuce wraps, but I know it was P.F. Changs and they were amazinggg! 

I rarely go there so I knew I needed to find a recipe that was good enough to satisfy my craving. Pinterest came to the rescue once again and after a few of my personal tweaks I created perfect lettuce wraps!! 

I typically use ice berg lettuce for mine since I love the crunch. I tried butter lettuce once but the lettuce leaves are too thin and flimsy for my preference. Making/eating lettuce wraps is a form of art lol. I like to take a piece of lettuce, add a little bit of steamed rice, pour the chicken mixture on top, drizzle with sriracha, top with chow mein noodles for an added crunch. And man I tell you what it’s sooo good!! 🤤

Chicken Nuggets

Like most human beings I love chicken nuggets! Normally I’ll buy the bag of frozen kind in the store and eat them for a late night snack. I especially ate them alot when I was preg because I didn’t feel like cooking as much. 

Unfortunately my health conscious husband hatesss when I eat the frozen nuggets so I’m like fine I’ll  make my own! Of course these will taste better if you fry them in grease but I am getting older and need to eat better. So I resulted to baking them, ‘oh joy’ lol. 

If you want to be a super parent, you can even add some blended zucchini or cauliflower to the mix so they can get some veggies in their meal. 😉

HOW TO FREEZE HOMEMADE CHICKEN NUGGETS

If you have kiddos at home or lovvee nuggets, I suggest doubling up on the recipe so you can freeze the rest. The 2lbs of ground chicken makes 30-32 nuggets and I froze most of mine to eat later. 

  • After they are done cooking in the oven, let them cool on the counter for 15-30mins. 
  • Option 1: Lay them flat inside ziploc bags in one layer and seal tightly. Freeze over night. Next day add nuggets into one bag, reseal, and store in freezer. 
  • Option 2: Lay them flat on a baking sheet with wax paper and freeze over night. Next day add nuggets into a ziploc bag, seal tightly and store in freezer.
  • It’s important to freeze the nuggets in a single layer so they won’t stick together inside the bag. 
  • When you’re ready to eat the again, you can re-heat in the oven, microwave, or air fryer. (Just like you do normal frozen nuggets)

Chicken Fajitas

I absolutely lovveee tacos and fajitas annnd basically any type of Mexican food. One of my fave restaurants to get fajitas from is Papasitos. Their beef is so tender and flavorful and their chicken is super juicy. I knew it was going to be a challenge to recreate their greatness but I stumbled upon a Pinterest recipe that caught my eye. After I added a few tweaks I’m proud to say that this is some good chicken lol. 

I like to use chicken thighs and breasts when I do fajitas just so I can have a good mixture of white and dark meat. The thing that makes this delicious is letting the chicken sit in all of those juices and seasonings for more than 10 hours. You don’t ‘have’ to add extra seasoning like I mention in the recipe…but I think it helps amp of the flavor while you grill it. I hope you guys enjoy this recipe and make yourself a large sloppy taco. 💚

Sloppy Joe Bacon Burger

My mom used to always make sloppy joes for us from the packet mix but it was sooo good. I came across this elevated sloppy joe recipe and just had to give it a try. Annd mann was it delicious! Using cheddar cheese and crispy strips of bacon just makes it so much better. It’s one of those things that you know is unhealthy and greasy but will still devour it anyways because it’ll make your tummy happy lol. I like to pop tater tots in the air fryer to eat with this and sometimes I’ll put it in my sandwich and ooohh weeee! Now that’s what I call mm mm good! Lemon Chicken and Spinach

I’m a huge fan of saucy chicken because plain dry chicken can just be soo boring. I love this recipe because it doesn’t require a lot of random ingredients that I have to buy and everything fits in one dish. The sauce is pretty thin but I haven’t figured out a way to thicken it and not mess up the taste. That’s why I like to eat mines with mashed potatoes and pour the extra sauce over the taters and ahhh it’s sooo good lol.🤤  I hope you enjoy it and let me know if you added something else to make this taste even better!

Perfect Thanksgiving Appetizers

I know I’m not the only one but I lovvve Thanksgiving because of the excess amount of food. It’s like you have an all you can eat buffet in your living room to share with your loved ones. (If only someone could come in and do all the dishes and cleaning after we eat 😆). I like to have little appetizers prepared before the heavy meal so my guests won’t get hangry and ask a million times when the food will be ready. Chicken and Dumplings

I don’t know if I’m the only one, but the slightest change in weather makes me go into fall mode. Meaning pumpkins goes up and sweaters come out the closet lol. And when it comes to food, oh best believe I’m whipping up warm and cozy dishes. The dangerous thing with comfort food is it puts you in a deep food coma so brace your self when you go back for seconds. 

I love to make chicken and dumplings when the season changes because it just makes you feel all good inside when you eat it lol. From the veggies, to the chicken, to the dumplings..mm mm good. And the best part is this recipe is it’s so quick and easy! Just dump everything in the pot and let it simmer until the goodness is ready to eat. Hope you enjoy!

Lemon Orzo Pasta

Sometimes grocery stores carry a limited stock of orzo pasta noodles which is inconvenient  when you’re trying to plan it for your upcoming meal. The last time I went to the store I bought a pretty large container of it lol…whichhhh I regret now (lesson learned). So I found myself in the position of trying to get rid of it and started looking up different recipes. I couldn’t find anything that caught my eye so I got bold and made up my own. Which to my surprise, turned out very well!! 

Tip: Before you the squeeze lemon juice for the last step make sure you taste the dish first. And then squeeze a little juice, stir, taste. Then add more juice if needed. I personally like it very lemony so I used a whole lemon’s worth of juice.  Hope you enjoy and let me know how it turns out!

Ranch Seasoned Chicken Thighs

          I love quick recipes and this is one of those! It’s a great idea to have pre-made seasonings in the cabinet you can use to sprinkle on poultry and seafood dishes. I found this recipe on Pinterest and I love to use it on my chicken thighs. I usually double up the ingredients and keep the extra seasoning stored in the pantry for when I need to prepare a quick last minute meal. I’ve only tried it on my chicken, but I’m sure it’ll taste yummy on roasted potatoes or sauted skkrimps. Hope you enjoy and let me know how you like it! 🙂

Turkey/Pork Meatballs + Zoodles

      I had this recipe saved on my Pinterest board for a long time and never felt like making it for some reason. After I had the kid I knew I needed to cut back on my carb intake so I finally gave in to trying this recipe out since it was healthy. Annnd it was delicious! I added a couple tweaks to better suit us and now this is apart of our frequently rotated meals. The mixture of pork and turkey is great since the pork helps add juice to the meatball. 

      If you’ve never made zoodles before, you should know that zucchini contains alot of water inside. After I use my sprializer I like to place the zoodles on paper towels to drain off the water. But honestly it’s allllott of water. I’ve sprinkled salt on it before and used more paper towels but it still doesn’t dry out all the way. After a couple minutes I just say efff it and throw it in the skillet lol. Since zoodles don’t absorb sauce as well as normal pasta you don’t need to cook them for very long in the skillet. Also, be mindful that if you have leftovers the longer they sit in the fridge in the sauce they’ll become more soft and mushy. So I suggest finishing your leftovers within two days.
