Lemon Blueberry Ricotta Pancakes

My mother decided to visit me one weekend and I love to cook new food recipes for her to try. 🙂 

I already had some jumbo blueberries in the fridge so I started browsing through Pinterest to get some ideas. 

I finally stumbled upon this pancake recipe that ricotta cheese in it. I’ve honestly only had ricotta in my lasagna but I was willing to experiment. The only thing with ricotta is you have to drain out the extra liquid so it won’t ruin your dish. 

These pancakes were pretty simple to make and after a few ruined pancake flips, I finally figured it all out lol. My blueberries were so big that it made the pancake batter fall apart when I had to flip them. That’s why I added in the step to mush up your berries to make it easier. 

In the end these were very delicious! You can taste a hint of the ricotta but the lemon and blueberry adds such a great flavor and it’ll leave you wanting more! If you give these a try let me know how you like them! 💚

Spinach & Banana Pancakes

Another weekend has arrived in the Johnson household and I turn to Pinterest to look up new ideas for breakfast. I came across this pancake recipe and thought ‘wait a minute..I actually have all of these ingredients at home!’ I was very excited to make this because I knew this could be a new way to sneak fruits and veggies into breakfast. For now, my son likes and eats all his fruits and veggies…buttt I know eventually he’ll start to get picky. And you can’t go wrong with pancakes and syrup! Every kid likes that! 

Anywhooo…this recipe was super quick and easy! I like that I can put everything in my blender and didn’t have to get my mixing bowls and hand mixer dirty. And the taste of the pancakes was sooo good! I had to make a double batch because my husband ate 5 pancakes. 😑 My son is currently 10 months and getting used to different textures but these hot cakes were a winner with him!

Cranberry Orange Muffins

One of my favorite parts of the season changes is seeing new fruits and veggies in the grocery store. Sometimes I buy extra bags of cranberries and stick them in the freezer just so I can have them on hand after the season goes away. 🙊

I don’t know about you but I like to make a quick breakfast on Thanksgiving day and these muffins are perfect for that. Not to be dramatic…but the cranberry to orange ratio is so perfect and it’s just mm mm good lol. When I made these the other day my husband kept on coming down stairs to see if they were ready yet smh. 

Another reason why I like them for Thanksgiving day is if you have leftovers you don’t have to worry about placing them in your fridge and taking up valuable space. (since I know everyone’s fridge is overly stuffed that day lol)

Blueberry Muffins

Blueberry muffins are one of those things that seem so basic but they’re sooo good. Everytime I say blueberry I think of this old video bahaha. 

I love this recipe because it’s simple and it has the right amount of sweetness! And the fresh blueberries just pop with each bite you take. Hope you enjoy them as much as my family does!

Banana Bread Muffins

 🍌BANANA 🍌 *in my minion voice* If you have nanners that are starting to turn old and mushy DO NOT throw them away. They are perfect to use in baking recipes and smoothies! Even if you don’t have time or the ingredients on hand to make something with them, pop those bad boys in the freezer until you’re ready to use them. That’s what I usually do unless my husband is on a banana splurge and eats them all up before they turn bad. 

One of my fave things to make with old nanners is these banana bread muffins. Travon was pretty skeptical about it but he’s now a huge supporter of this movement. 😂 

It has the perfect blend of cinnamon, banana, sweetness, and adding walnuts to the mix makes it so much better! Hope you have fun making these warm yummy  muffins. 💚

Raspberry Croissant French Toast Bake

For some reason I am not successful at making french toast so this is my alternative and lucky me..my husband loves it!

Him: ‘this tastes like rich people french toast..I knew after tasting this you were the one’

Me: ‘but I just made this and we’ve been together for years’

Him: ‘yea I’ve been on the fence this whole time’

😒🙄😑

Annnyywayyss..back to the food lol. The original recipe is more than we ‘need’ to eat so I cut it in half for my family and it’s still plenty. I also don’t feel comfortable using 12 eggs for one dish..i’m like goodness gracious, that’s like a weeks worth of breakfast gone for one meal. The best part is you make it all the night before and in the morning just pop that bad boy in the oven while you handle your other morning businesses. I’ve only tried raspberries but I’m sure it would also taste great with blueberries, blackberries or cranberries. Breakfast Crescent Ring

I typically cook breakfast on the weekends or when I have company over. When you have guests over breakfast definitely sets the tone for the rest of the day. I love having a yummy spread prepared and filling the whole house with smells to wake them up from their slumber. Eggs, bacon, and potatoes is a quick go to but I knew there was a way I can elevate the first meal of the day. Lucky me I found this breakfast ring and it’ll definitely be my new go to. You customize it to your liking and add all kinds of veggies, cheese in meat with the scrambled eggs. Since it was my first time I only did bacon, cheddar/ fiesta cheese, and bell peppers. I also added garlic powder, season salt, pepper and onion powder to my eggs before throwing them in the skillet. I thought the eggs would be over cooked since you’re basically cooking them twice but nope! They were perfectly fine. 🙂 Pilsbury added a new can to their inventory and failed to notify me so my dumb self grabbed ‘crescent rounds’ instead of their ‘crescent rolls’ can. But I folded the strips in half and made it work. Good luck recreating this and I hope it turns out as delicious as mines!
